Besides the usual restaurants, if you really want to dine like a local, one of the must do things while you are in Hong Kong is to try out the traditional fast food shops. You will be offered table service, but expect to share your table with strangers, and leave the place and pay the bill as soon as you have finished your food. Sister Wah is a fast food shop in Tin Hau and serves beef brisket in soup as its signature dish, it is a very popular venue for the locals and it is common to see long queues at lunch hours thanks to its famous beef brisket, which landed Sister Wah a Michelin Bid Gourmand.

I was lucky enough to get a table without needing to wait as I arrived just before the rush hour, first I had the radish poached in beef stock which was rather special, it was sweet and clean with just a hint of beef essence which worked well as a starter. The main event of the beef brisket with noodle was indeed special, the meat was very moist and full of rich and wonderful meaty aroma, as well as flavours. The beef tendon was the true star, however, it was perfectly marinated and smooth like jelly, but with an incredible powerful savoury taste.

It was easy to understand why Sister Wah is so popular, it has done a fine job in producing some of the best beef brisket related noodle items. I am a massive fan of places that focus on what they are good at and offer a smaller menu, because this usually mean you will get better quality in return and less waste for a restaurant. There are plenty of other classic Hong Kong fast food joints that specializing in cretin items such as wonton (Mak Man Kee) and milk pudding (Australia Dairy Company) and I really encourage a visit for a slice of real Hong Kong food experience.
